  The book starts with a lovely essay about the simple diet of the people. Non cooks should read it! The recipes are all excellent. I won a chili cook off using the chili recipe in here made with venison shoulder.

    This is delicious, and I make it with dark turkey meat after boning out the thighs and legs. It is just as good with the pork.

    Simple and good, with a nice spicy kick. This definitely should be served over rice. There is too much sauce to think of it like a traditional chili. I prepared the beans ahead of time. That worked very well. The honey was a surprise ingredient - it was there, but stayed in the background.
