    Silky Onion Chutney [pg 22]: I was a little worried until the pineapple juice & cider vinegar went and yes....this is a very tasty little condiment. I used all yellow onion for the puree and a mix of yellow & red for the rest. With a hot curry powder & my own de Arbol chile flakes, there is a good punch of heat behind the tart/sweet flavour. A 1/2 recipe gave me a higher yield than expected: 3 x 125 mL jars for the canner & around 1/2 of another heading to the fridge. I would make this again.

    Onion Garlic Jam [pg 85]: This a lovely, dark coloured jam but a quick taste while filling jars read a little sweet for my taste. I will have no trouble using this up in the coming year and if I did repeat, a good hit of cayenne/red pepper flakes would be a good idea. A 1/2 recipe gave me 1 x 125 mL + 2 x 250 mL jars for the canner with a little bit leftover for the fridge.

    Tomato Basil Sauce [pg 131]: This is a good way to work through the mix of tomatoes that are still hanging around. I basically just started peeling/seeding/chopping until I had 6 cups (for a 1/3 recipe). I like how you puree 1/2 & leave 1/2 chopped. I did let it simmer/thicken for a while with a parm rind. Some is being used for an upcoming dinner & the rest is heading to the freezer.

    Sweet Chili Sauce [pg 130]: I used a mix of very hot Numex orange, medium hot Fresno & sweet reds to make this sauce. It has a beautiful colour with a good syrupy consistency and a quick taste confirms its very nice sweet/hot profile. A 1/2 recipe yielded 3 x 125 mL jars for the canner + a little for the fridge. I will likely come back again next year (or next week if things keep ripening :) to repeat.

    Mr. Piper's Pepper Pickles [pg 104]: The end result here is a colourful mix of sweet & hot peppers. With a volume (ie 4 cups for a 1/2 recipe) given as the target for sliced peppers, I used a mix of banana, jalapeno & sweet orange (as called for) + some Fresnos, cubanelles & sweet yellow. 4 cups of peppers + 1/2 recipe of the brine was the exact amount needed to fill 2 pint jars (which, in my experience, doesn't always happen). The only change I would make for next time is to use more red (hot or sweet) peppers.
