    I bought this book at a recent White elephant sale and the Peanut Butter Pie sounded like a good first recipe. I have had a similar pie at a diner but with a meringue top. Made the basic pie crust but would not use all shortening so I did a blend of unsalted butter and Earth Balance shortening. I had to use a little bit more water to get it to come together. I let it chill for over an hour before rolling. Handled beautifully. The crumbs with peanut butter seemed a bit dry but they are crumbs so I let it be. Filling came together well, except I tempered the egg yolk mixture rather than add it to the hot milk all at once. Overall pie was very good - crust was flaky, filling had a subtle peanut butter flavor which I preferred as I am not a huge PB lover. I think the crumbs could use more peanut butter but then maybe they would not be crumbly. Definitely a good pie all around.
