      This is a great summer side dish. Made it without the cilantro and arugula and it was great, but it would be even better with them. It made at least 6 side servings. Held up well in the fridge and was great cold for lunch the next day as well.

      Very good, liked the higher ratio of herbs to grain. Left out the cucumber and tomato.
