    Sausage Salad - used sliced bologna for sausage part. The concept for this salad is simple enough. Just sausage, dill pickle, green onion, sliced red onion, dill pickle juice and sherry vinegar. I can imagine having this in a biergarten in Germany along with soft pretzels to chew and of course, beer. Be prepared for the sour taste but since I like sour foods, this was just fine.

      For Oktoberfest meal. Never considered making grilled steaks for Oktoberfest meal but the photo in the book enticed me to go ahead with it and glad I did. Lots of peppercorns and the addition of paprika to the fried onions elevates the taste. I used cast iron to cook the steaks instead of grill.

  • Mushroom goulash with pretzel dumplings (Rahmschwammerl)

      For Oktoberfest meal. Used shimeji and maetake mushrooms in place of chanterelle. Instead of pretzels, used leftover hotdog buns to make dumplings. Simple and great taste. This goes better with white wine.

  • Cheese spaetzle (Kasspatzn)

      For Oktoberfest meal. Easy to make. Had to add a little more water to the batter (about 2 T) as it was tad too thick. The addition of fried onions and fresh chives on top is a nice touch. Great taste.
