    This book is great for very good nutritious recipes. They are different from anything most of us have ever cooked. The ingredients / recipes are all about optimum health with as little fuss as possible. And they are really delicious. I now use this book most of the time and can't recommend it highly enough. If you want to do something really good for your body, whilst also enjoying what you're consuming then this is a great place to start. Dr Libby also has a great health book out "Accidentally Overweight" which gives you the tools to help yourself lose weight.... and explains the reasons why it's so hard for so many of us to do so.

      This is the first recipe in the book and it was the first recipe I tested in this book. I didn't add the rice milk to my eggs. I used coconut oil too as was keen to try this out. A great healthy breakfast which together with the salsa was a feast for the eyes and soul!

      Managed to track down the Essene bread here in NZ. Very very crumbly so difficult to keep a slice intact after cutting. I have never liked my eggs poached- hmm I know - think it was something to do with my childhood and inability of my parents to cook a boiled or poached egg- the white were always undercooked. So this was my first poached egg after almost 38 years! The essential seed mix was a great addition. This was a nutritious and filling breakfast and one I will be repeating!

      First attempt at cutting a young coconut. It was tough going but thrilled that my Chinese cleaver did the trick. When I tried this recipe I used my Vitamix blender, next time I will use the food processor instead as I found it a challenge to get much of the yoghurt out of the blender jar. It was so thick much of it stuck to the blade. The longer this 'yoghurt' is left the thicker and whiter it gets. Let down using more coconut water. I use this to serve with muesli & berries. Tastes quite nice!

      A quick and simple way to get nutrients into your diet. Parsley is a nice addition to the eggs.

  • Almond milk

      Oh how I love this! I tried to make this in my Kitchen Aid Blender- didn't really do the job as I had hoped. I then decided to purchase a Vitamix. Amazing machine. Blended thoroughly in less than 40 seconds. I strain the milk and keep the pulp.Can use to make friands etc. The raw almonds need soaking for a good 8-12 hrs before hand. I keep extra soaked almonds stored in my freezer and then they are ready to make up my next batch of almond milk. My sons have noticed the difference between homemade almond milk and the cartoned products in the supermarket. This is far superior. Once a few bottles of this nut milk are made up you can go on to make the Almond Date Shake.

      I liked this - but it was quite rich. My husband said it reminded him of the soft centred fruit creams -chocolates that everyone leaves behind in the tin at Christmas time.

      I soaked the pumpkin seeds before making this... perhaps do this overnight. Beautiful and creamy, not that sweet but tasted pretty good I have to say. It made enough to serve about 4 people in tall tumbler glasses.

  • Chocolate pumpkin seed skin shake

      Deliciously thick chocolate shake. I halved the ingredients in this recipe merely as I only had a tiny frozen banana. Having said this it actually made enough for a big glass. The avocado is an ingredient that is not even detected on tasting- do not omit this. Cacao powder ( raw cocoa powder) is very strong and you may want to slightly reduce the quantity.

      I keep everything to hand to make this shake and I often have this - in fact most days ! My freezer has a box full of frozen bananas ( skin off) to hand and a box of presoaked almonds too. I keep a large supply of medjool dates in my fridge. Then I am never to far from a healthy filling snack!

      I was very excited to try this out. All looking good till I came to roll this. I am used to making conventional sushi rolls - the rolling wasn't the issue per se but the quinoa disintegrated- ? not sticky enough. One roll did hold and I succeeded in cutting it too- but as soon as I picked it up ,all the filling crumbled into my hand. I made these for a function I attended so I was not happy with this. However the taste was fairly pleasant. I will attempt to make these again as I like the concept. Hopefully can get them to hold their form and shape.

      Need to be prepared to make this. Roast veggies,precook quinoa & lentils. Tomato sauce easy to make ( recipe makes a lot of this - I had 1 1/2 cups left over from making this recipe. A nice lunch or dinner - liked it better the day after.

      Such an easy recipe.No cooking involved at all. It took me just 3 minutes to measure out the ingredients and make the base- using food processor. Pressing into tart tin took about 2 minutes to get a nice smooth and leveled surface. Melt cacao butter and cool and then approx another 3 minutes to measure out and blend the topping ingredients using my Vitamix before pouring onto base. That's it - all done! Place in freezer. 2 hours later a small slice decorated with strawberries slipped down just nicely. You do not need anything more than a inch slice. It is enough to give you a sweet treat without any sugar. Keep in freezer. Only downside ( and it's not really) is that my version did not turn out the same colour as the picture in the book - mine was more like a pinky mauve rather than a red/ pink. Thumbs up from all in my family. Will most definitely make this again.
