      I added extra Rancho Gordo Banana Vinegar as it needed it but it also needed a bit of sweetness so to serve I added a drizzle of a white balsamic but some agave or honey dissolved in the Banana vinegar would work too. I had some Queso Fresco so crumbled that on the top and the saltiness of that worked well too. Would make again with those mods.
