Notes about Recipes in this book

  • Chicken mojo criollo

    • jay.moe on August 14, 2022

Smoked according to recipe directions made a moist, flavorful chicken. The chicken was cooked in only an hour on a kettle grill. After 30 minutes, I added more coals (per recipe instructions) and more wood (not per recipe instructions) since it had stopped smoking. Although the chicken itself was very moist and flavorful, the skin was much darker than I anticipated and was very smoky. My husband liked the flavor; I thought it was too strong. Probably wouldn't add extra wood chips next time. The instructions were very detailed and provided a lot of useful information for those who are new to smoking.

  • Parsley marinade

    • jay.moe on August 14, 2022

Marinating the chicken for only four hours still made the chicken very flavorful. A typical chicken marinade, but it was good.

  • Garlic and rosemary herb paste

    • jay.moe on August 14, 2022

Despite the large amount of garlic, it was not overpowering once the chicken was smoked.

  • Jalapeño-cheddar skillet corn bread

    • emily_3s6em8 on January 24, 2026

Cheesy, buttery, and love the jalepeno. The batter was super thick so didn’t spread out in the pan but tasted great
