      First of all I did not blend this but just shook with ice, but I would not mind trying again and blending. There is no reason for "lemon flavored"rum, just use more white rum and lemon juice. I like the nutmeg garnish.

      Really nice & easy, great combo of flavours. First time making a granita - seems to make an awful lot (even halving the ingredients I still had enough for 8 or more)

      These were definitely fritters and not crab cakes. I would call the batter a Choux pastry but fried instead of baked. They were very good and just as good cold the next day. I do wonder how they would turn out baked??

      Sadly, this was a waste of good sablefish. Not really bad, but the coconut milk drowned out the delicate flavor of the sablefish. This recipe would work better with a more strongly flavored fish.

      I made this using the coconut sauce as a marinade for tofu instead of fish, which I baked in the oven and then ate with rice and greens. I also added sliced anaheim chile to the leeks. It was quite nice; no need to worry about overpowering the flavor of the tofu with the sauce.
