    Siniya of Sea Bass, page 73 - used frozen cod from TJ's without skin and this worked out really well. This was a complete meal because of fish, potatoes, cauliflower, tahini, garlic, and sugar snap peas (extra addition) in one pan and although I fixed salad it was really not needed. The taste was unlike anything I've had with fish and the overall dish was quite mild but tasty. I may add soy milk (love goma doufu or sesame tofu) in place of water when making the tahini sauce next time to see what happens. Sumac and dill really add to the taste before serving.

Steven Rothfeld is a photographer specializing in luxury imagery. His food photography has recently been featured in French Comfort Food and Le French Oven (both by Hillary Davis). He divides his time between photography destinations throughout the world and his home in Napa Valley, California.
