      Made this with blueberries and a sweeter kind of apple, rather than tart (what we had on hand). It was absolutely delicious. Not what I expected. Like a very custardy French toast. Cooked it several minutes longer than the recipe called for.

      Substitutions: freshly milled whole spelt flour; lemon juice + whole milk. Bake for 22 minutes.

      Like the idea for this dish (the apples and brown sugar in the bottom in particular) but the batter cooks up very thick and heavy (made in an 11” cast iron skillet). Would try a different batter recipe next time and add more apples if cooking with 11” cast iron skillet (to completely cover the bottom of the pan).
