  • Coffee pecan muffins

      I veganised this lovely recipe by using a flax 'egg' (1 tbsp ground flax seeds mixed with 3 tbsp warm water and left for 10 mins to gel). It's a very easy recipe and the muffins came out moist and fluffy, perfect with my morning coffee, YUM!

  • Avocado 'mayo' slaw

      I expected this slaw to be light and fresh but could not have been more wrong! The dressing was far too thick and more like a houmous in consistency. It needed thinning down a lot - I used more olive oil and lemon juice but might have been better with some natural yogurt as everything just seemed to get claggy. In the end it just didn’t taste very nice. An expensive waste of ingredients!

  • Carrot, pea and coconut curry

      This is such an easy, quick and tasty curry, if you wanted to make it lower in fat you could use lite coconut milk and add in a tiny amount of corn flour (cornstarch) to thicken it to taste right at the very end. You could add in any veggies that cook in the same time eg green beans or courgettes.

  • Coconut spiced prawn korma

      Excellent. Used tinned tomatoes and sliced onions (I like some texture). You can make this one up to a point and then just add the prawns when you are ready to cook. Not overly coconutty (daughter not keen) and a lovely base heat. Definitely a do again. Nice to have another go to Prawn recipe.

  • Red rice and roasted leeks chimichurri bowl

      I made this dish with much less oil than the original recipe, for 2 people 100ml of oil seemed a lot! Firstly, I roasted the leeks in the oven in a little dry white wine and a spritz of oil rather than frying them. I made the dressing with much less oil by adding a little water to it and it worked fine and tasted great too. A lovely combination of textures and flavours and a way to use leeks in a warm salad that I might not have thought of myself, great!
