Notes about Recipes in this book

  • Kulcha dough

    • joneshayley on May 02, 2021

Great dough though slightly more flour used. Rich and fluffy. Really very good

  • Masala kulcha

    • joneshayley on May 02, 2021

My favourite kulcha- the chaat masala makes it

  • Chilli, garlic & cheese kulcha

  • Egg bhurji with Berkswell & shallots

    • joneshayley on May 06, 2021

I took some license with quantity to suit fewer people and our taste. A great combo for a special breakfast but use common sense to adjust to scale

  • Duck breast with sesame & tamarind sauce

    • joneshayley on June 21, 2022

Great masala and well cooked duck. One to make again.

  • Old Delhi chicken

    • joneshayley on May 02, 2021

Brilliant recipe. Easier and just as good as dishoom version. Personal edits- halved the butter to no ill effect and decanted half the sauce off for another meal- otherwise there’d be far too much

  • Black stone flower lamb chops with burnt onion raita

    • Smunn on May 09, 2025

I really want to know why a recipe called Black stone flower lamb chops doesn’t have black stone flower in the ingredients or the recipe description. Is it vanity naming? Has the restaurant version got black stone flower in it but we are supposed to make do without it even though it seems to be the defining feature of the recipe? Really!

  • Wild boar laal maas

    • joneshayley on May 25, 2021

Very very hot- the chilli garlic paste is super fiery so adjust to taste. 400g ghee is ludicrous- I assume 40g is correct and poor edit (as it a theme through the book) really nice but with the recipe faults I’m unlikely to make again

  • Delica pumpkin with makhani sauce & hazelnut crumble

    • joneshayley on May 23, 2021

Very nice, preferred the chicken version though . The puffed rice and hazelnut crumble is inspired

  • Chanterelles in malai sauce with fresh peas & pea shoots

    • VineTomato on December 22, 2022

This curry has a lovely flavour but is very decadent! I used king oyster mushrooms in place of chanterelle's and dried fenugreek. The dried fenugreek was a little overpowering and I think it would have been much more pleasant with fresh, as the recipe calls for. The little piece of mango were fab. Not sure I'll make this one again, for this many calories there are other things I rather eat.

  • Pickling liquor

    • joneshayley on May 01, 2021

Great pickle liquor- used for shallots and they were lovely

  • Sugar syrup

  • Mangifera

    • joneshayley on May 01, 2021

Lovely cocktail. Sweet and spicy. Make sure to add the pink peppercorn lime- worth it

  • Lucky neem

    • joneshayley on May 02, 2021

I love this both short as written and long with sparkling water. Very refreshing cocktail
