Phat Thai (pg. 143) while my Thai grocer has a version I slightly prefer, this recipes has all the elements I look for before deciding to try it ... most notably salted radish. It is worth a trip to your Asian grocer to get the appropriate ingredients -- fresh rice noodle, Chinese chives, red shallots. They make a significant difference.

Bibimbap (pg 67) is a "quick" version as the various sides are stir-fried in succession without separate seasonings. This results in a respectable bibimbap especially if you have rock bowls for crispy rice.
