  • Baked Arctic char with mushroom Hollandaise and crispy potatoes

      I made this for dinner. Overall it was okay. Some things that I would do differently next time. 1) I would probably pan fry the char, not bake it under foil. It came out a bit too soft for my liking. 2) the hollandaise was quite vinegary, I'd cut back on the vinegar. Potatoes were really good, and overall it was okay but not "great".

  • Ginger beer ham hocks

      Really easy and delicious. My guests went crazy for this ham. Served with homemade bread, salad and the piccalilli salad from the same feature, which was a great combination. It's meant to be for a picnic so FC doesn't mention what to do with the cooking liquor. It seemed a shame to waste it so I tried to make it into a gravy. It didn't quite work, but I still served the thickened juices on the side which helped to enhance the ginger beer flavour. Otherwise that flavour gets a little lost beneath the sticky glaze.

      I knew when I saw this I had to try it and it was just as delicious as I'd hoped. Very indulgent - cream, pasta, and fried panko-breaded chicken - but totally worth the calories.

  • Caramelised onion, spinach and goat's cheese filo pie

      SO made this for a quick weeknight meal. We replaced the spinach with spring greens which was nice. Don't over do it on the onion chutney as it can be overwhelming. Very nice and easy.

  • Tomato, dill, olive and feta orzo

      I chose this as a storecupboard supper but it turned out really tasty. I couldn't get fresh dill so subbed in fresh basil instead, and also used a single tin of plum tomatoes plus some fresh cherry tomatoes (rather than two tins of cherry) and sugar in place of the agave. I don't often cook pasta this way but it works really well. When making again I'll be more careful not to let the orzo stick to the bottom of the pan when simmering.

      Have cooked this a few times. Is quick and asy. We used quorn pieces as we're veggie. Served with rice.
