      Did the final cook in a kettle barbecue and the edges got a bit too crispy to be pretty, but the flavours were excellent. My cauliflower was tiny so I padded it out with some broccoli too.

      I added half a jalapeno, chopped, to the veg instead of adding chilli to the sauce, and I didn't add any broth to cook the veg in. It stayed very wet because my husband poured half a glass of white wine in while I wasn't looking "to use it up". Really good though, and excellent with roast chicken.

      The recipe instructions were not written so well. Bechamel sauce takes awhile so should probably be done sooner. There was no need to add broth to the veggies being cooked on the stovetop. I cut the zucchini and potatoes in slices like an actual gratin rather than cubed. I threw in the potatoes raw though, though I let it cook around 1 hour 15 minutes in the oven.

      I used saffron threads, which gave a lot of flavour but not a lot of colour. A very nice side dish!

      Deeply chocolate! I bumped up the cinnamon & scaled back the sugar, used fresh cherries & in place of the cherry syrup, I subbed cherry liquor for a delicious, adult dessert. Baked in a loaf pan.

  • Amaretti brownies with Amaretto

      I made 3/4 recipe in an 8"x8" pan, lined with a foil sling for easier removal. Checked after 35 min, the brownies were done. They were similar to Torta Caprese rather than traditional brownies, with a crisp crust (prone to breakage) that sank upon cooling and moist center. Very good.

Jamie Schler, the author of Orange Appeal: Savory & Sweet (review), owns the Hôtel Diderot in France where she churns out delicious dishes for her family and guests. As with many in the travel and other non-essential businesses, things have been rough during this time but that hasn't stopped her from cooking and baking and sharing those dishes on her social media feeds.

It is a beautiful collection of comforting recipes that we can turn to time and again.
