      Someone made this soup for our cookbook club for this book and it was amazing. I kept going back for just a little more. The flavors were so light and fresh.

  • Crab, mint and corn grilled cheese

      Having crab and mint leftover from the soup, I decided to give this a try. It was pretty good. I used Muenster and cheddar instead of fontina since that was what I had. Corn and mint are another winning combo I never thought of before. It made me want to make a corn, crab, mint, and mayo salad. So, I guess that's up for tomorrow.

      This was by far the best soup from this book at our cookbook club. I had none left to take home. Who knew lemon and mint would make such a great flavoring for crab soup? I didn't have seafood stock, so I made a stock from a ramen chicken packet, a little veggie broth, and some MSG (since it's derived from seaweed). I also used shredded leg-style imitation crab since lump crab meat is like $18 for a handful. The soup is light, delicate, and amazing.
