Notes about Recipes in this book

  • Asparagus & leek frittata

    • kariholsberry on May 15, 2026

Nothing fabulous but easy weekday breakfast. I did add a vegetable seasoning, salt and pepper didn’t seem enough and it worked.

  • Not-fried pinto beans

    • MsMonsoon on June 27, 2024

Did a whole 1 lb. bag of pinto beans which is a little more than double a recipe. Mine needed more time -- I think maybe 10 minutes more at high pressure? I messed up and added the spices during for the cook cycle. You're supposed to add them after draining and when mashing up. So when I drained, I drained off some of the spices. It still turned out good, though. Kind of nice to have a huge batch of fat-free refried beans to make quick burritos, nachos, or rice and bean bowls.

  • Crunchy lentil salad with shallot vinaigrette

    • Fazlet on July 11, 2025

Favourite lunch for work in summer!

  • Korean chicken bowls

    • Wilmavl on October 31, 2020

Can add extra spinach, green beans

    • mjes on August 30, 2021

I substituted gochujang for the sriracha and demerara sugar for maple syrup. Tasty dish that I used to practice the pot-in-pot technique in my instant pot. Worthy of repeating.

  • Vegetarian red beans and rice

    • Ajammies on February 17, 2022

2/22 Good, just not spectacular. Would be good with maybe some extra veggies. 9/22 substituted kidney beans for RG Cassouet white beans, added veggie broth (double so it was more of a broth with the beans) and added a can of diced tomatoes instead of the tomato paste. served over brown rice.

  • Mongolian beef stir-fry

    • nicole_mwyopi on May 12, 2026

Delicious! Will definitely make again. High protein and super tasty. I used broccoli instead of snap peas just because I prefer them and they soaked up the yummy sauce nicely

  • Carolina barbecued chicken with simple slaw

    • Wilmavl on November 19, 2020

Very nice! Excellent to use up cabbage
