  • Ultracreamy hummus with baharat-spiced beef topping

      Boiling canned chickpeas for 20 minutes makes the skins easy to remove. It is very creamy. The meat topping comes together quickly, while the chickpeas are boiling. For our preference, I omitted cinnamon & cloves, increased coriander & added some allspice. I also reduced the smoked paprika a bit and added some plain paprika to compensate. It was quick and satisfying... I added some pomegranate molasses when serving and would do so in future.

      Very simple, but delicious comfort food. I did substitute Badia brand adobo and used different rolls. I also did drain my beef. Given all the cheese and the mayo being added. I'm glad that I did so.

      This was just ok. We thought was a little bland. We ended up adding parmesan to boost the flavor a bit.

      I like this recipe as it is one pot. However I did double the mushrooms and added thyme while they cooked. I added an extra T of APF, an extra ? c wine in the deglaze, beef instead of chicken broth and some Spanish Paprika shortly before serving.
