      I made this with ingredients on hand - skin-on bone-in chicken thighs and rose wine. I also didn't have nutmeg so I used garam masala. This had an elegant, rich flavor that belied the relative simplicity of the ingredients.

      I made this tonight with regular minced beef and some chopped pepperoni, and home made tomato paste. Working with the cabbage is a little bit fiddly, but not too difficult. The finished dish looks good and is very tasty. For me, this dish holds many memories.
