      Honestly, these were pretty good. This is the first recipe I’ve made from this book and I had pretty low expectations but all my other cupcake recipes were for 24 or 48, presuming that you were hosting a children’s party. Substituted a simple chocolate ganache for the peanut butter icing.

      Very quick and straightforward, I used Ritz crackers for the base and made a raspberry jelly to put on top instead. Easy, delicious, makes the perfect amount for two 8-ounce mason jars.

      Excellent dough and texture. Amp up the cinnamon for additional flavor. I didn't make the icing as I didn't have cream cheese. I used store bought icing. Still delicious.
