  • Creamy carrot and ginger soup

      This is a really nice vegan soup. I followed the recipe with a few changes. I added about half a tsp of lemon rind and about two tsp of coconut palm sugar. In my opinion, these two additions enhanced the taste of the carrots and ginger.

      I subbed soy sauce for tamari and should have halved the amount. The resulting sauce was too salty, but had a nice flavor. I would make this again and reduce the soy sauce (or water it down).

      Too salty. If I made it again, I would use low sodium peanut butter and/or soy sauce.
