• Mixed pasta with Jerusalem artichokes (Pasta mista al topinambur)

    This is like restaurant food in your own home. It's a little labour intensive to prepare, because jerusalem artichokes are quite fiddly. I added a chicken stock cube in with the water, and stirred some basil in in the last minute of cooking, as well as a tbs of cream I was trying to use up. Absolutely delicious

• Paccheri with kale and walnuts (Paccheri con cavolo e noci)

    This was excellent! We all loved this and it's a definite make again. I subbed almonds for the walnuts. It also is a relatively quick dish.
