      Wow, what an excellent sandwich! Takes a bit of prep work with sautéing leeks & mushrooms separately, roasting thin potato slices, but it was worth the effort. This even impressed my foodie son. It's hearty enough to satisfy meat-eaters as well as veg-heads.

      If I simply had the recipe without instructions, I might mistake this for a panini sandwich. I gritted my teeth and used garlic powder rather than fresh garlic. Be careful to keep the tomato slices thin for the right balance of ingredients. I enjoyed the sandwich.

      For my eggplant-hating kids, I used this base recipe to make "pizza" grilled cheese, but made the recipe as written for me and the hubs. I LOVED it. Also had pizza sauce on the side for dipping.

      Hubby enjoyed this sandwich quite a bit! He's not fond of mustard, so mayo was subbed for the Dijon. I pan-cooked a chicken breast, the recipe's alternative to using roasted chicken breast. Quite easy to put together as well.

      We enjoyed this, though our apricot to jalapeno ratio was a bit more tilted to the jalapeno side. The addition of the chevre helped cut through the bite that the jalapeno gave which was really nice.

      We subbed bacon in for the ham. Overall We liked this, though the mustard was the most prevalent flavor (which I am fine with). Will make again.

      Pretty simple but tasty grilled cheese. Mustard added an interesting but tasty flavor, and the subtlety of the rosemary butter added a lot of taste as well.

      This is a definite winner! Made it with black forest ham and extra sharp Cheddar on homemade sourdough bread. The rosemary butter and apple mustard really elevate the sandwich. Served it with homemade caramelized onion tomato soup made with heirloom tomatoes from our farmers market. Will make the breakfast piglet grilled cheese recipe in the book in the future, which is essentially the same sandwich plus a fried egg.

      Doubled the recipe. Added 4 garlic cloves and extra coconut milk because I decided to use the whole container at 25oz. Very good.
