      Seemed a little under done using the timings in the recipe but perhaps best being a bit soft than if fried?

      1.2kg cooked in 40 mins. Brushed lightly with olive oil. So nice to be able to have a roast chicken during this never ending hot weather, without using the oven. Served with Greek salad and crushed new potatoes.

      Quick and easy dinner for 2. Don't use pancetta - too salty. Cooked for 8 mins, excellent for entertaining.
