      I don’t think these taste like banh mi, but they are very good. I couldn’t fit all of the ingredients in, so I had leftovers of some of the fillings. It’s a good combination though, lots of freshness from the cukes and herbs.

      This is delicious. I always have lots of leftover meatballs, but my coworker who makes this doesn’t, so I have no idea what accounts for the discrepancy. We both really like it though. If I have extra spinach hanging around, I sauté that and add it to the bowls.

      The Creamy Avocado Herb Sauce and Quick Pickled Onions are listed as optional, but I think they are crucial. It makes for a good amount of work, but it’s worth it. This is one of my favorite dishes in the book.

      I like this salad quite a bit. The mandarin oranges and chow mein noodles really add some nice flavor and texture. This salad is pretty easy to throw together once you’ve cooked the salmon.

      This is a very good salad. The eggs and croutons are listed as optional, but I think they are crucial. I skip the avocado because it will be brown by lunchtime. (A lot of recipes in this book include sliced avocado as an ingredient, which is weird for a meal prep situation.)

      This one takes a bit of time, but it’s quite delicious so I’ve made it a number of times. Naan is great with it, though it’s not necessary as I find the portions in this book pretty large.

      This is delicious! It makes more than the 4 servings the book says, but I'm on day 3 and I'm not at all tired of it yet. I'll definitely make this one again.

      This is good, although there’s not a lot of overlap between the months that I can get decent fresh basil and the months in which I’m willing to turn on my oven. I’ve used prepared pesto in a pinch, which still worked though of course it wasn’t quite as good.

      I like this dish quite a bit, and I usually get 5 servings out of it rather than the suggested 4 so it’s nice that it freezes well.

      I love this concept. I don’t really like bacon, so I usually make the frittata with cherry tomatoes, spinach, and Brie (from a frittata recipe I’ve used in the past.) The largest tortillas I can find (Goya burrito) don’t quite wrap the frittata pieces completely, but it still works. This is another of my favorites from this book.

      This makes a TON of filling, and I cannot cram it all into 4 burritos as the recipe suggests. I get 6 or so burritos out of it.

      I gave this recipe a bit of side-eye when I first saw it, but it is surprisingly good.

      Weird flavor profile, but it kind of works. It definitely makes a ton of filling and if I cram it all into 3 quesadillas, I can only eat 2/3 of each one at a time. In the future I will probably divide the filling into 4 quesadillas.
