Notes about Recipes in this book

  • Smashed roasted fingerling potatoes with pancetta and sage

    • Fyretigger on July 09, 2023

These were fantastic! I will definitely make them again. I made a 1/2 batch and it filled a rimmed baking sheet. I think a full batch would require 2 baking sheets to roast in a single layer.

  • Roasted acorn squash with pine nuts, honey, and parsley

    • Partyof7 on October 09, 2022

Yum! My husband who would never chose to eat a winter squash really enjoyed this easy great recipe

  • Cheesy chicken and broccoli soup

    • dbuhler on June 25, 2024

This is a delicious and comforting soup that is made even easier by swapping out the chicken breasts for shredded rotisserie chicken. I've made this many times and have used varying amounts of American cheese and it always works out, so if you prefer to use all cheddar cheese I'm pretty sure you could. I like to serve this with crusty bread or focaccia. A family favorite!

Thanks again to EYB and other users' reviews, I found this random recipe. I had a bunch of American cheese to use up, and this helped me get rid of it. It was freaking delicious. I'd recommend decreasing salt in the recipe, especially if you use pre-cooked rotisserie chicken. But, the texture was amazing when I pureed some of the soup before adding the chicken back in. I will make this again.

  • Turkey meatballs with skillet brown rice dressing

    • dbuhler on January 04, 2024

This was okay but nothing special for us. The texture of the meatballs was great and the rice and cranberry dressing was moist, but the overall flavor wasn't exciting. It was also missing my favorite part of Thanksgiving dinner - the gravy! I might make it again and see if I can ramp up the flavor somehow.

  • Pork tenderloin and pears with balsamic onions

    • Shewi128 on November 15, 2023

Really well-seasoned and cooked pork! It was also a one-pan recipe, and was about 1 hour from start to finish if you time the chopping of the pears and onions well. Even my kids liked the pork. Highly recommend!

  • Cheese pie (Tiropita)

    • jtodes on October 24, 2022

I substituted gruyere cheese for graviera. It was excellent. Definitely make it again.

Cook's Country showcases "country cooking": simple, great-tasting homemade food--Sunday dinners, potluck suppers, backyard barbecues, and even kids' birthday parties. And you can be sure that Cook's Country's recipes will come out right the first time, and every time, you go in the kitchen. We've taken the obsessive recipe development techniques that we've polished through years at America's Test Kitchen (which involve testing and tweaking recipes as many as 100 times until we are certain that anyone who follows them will meet with success) and brought them to Cook's Country. Cook's Country's mission is to reclaim, revive, and restore classic American heirloom recipes.
