    Subbed peanuts for cashews. The spice rub on the sweet potatoes is very nice. My lemon was quite large so I only used half in the dressing. I do think she calls for quite a bit of garlic powder which seemed a bit excessive. I enjoyed the pomegranate molasses in the dressing. Easy salad.

    This was everything I want in a salad. Would gladly made again. I couldn’t help thinking about how this would be great with some grilled meat or seafood even though this is a vegan book.

    This is the kind of soup I crave as the days get colder. I added some ground turmeric and it was lovely.

    A nice stewy type dish, although not as saucy as in the book picture. I liked all the veg, but felt like it needed a spicy and/or acidic element added. I think a splash or two of a vinegary hot sauce really improved the dish.

• African pistachio stew (Egusi stew)

    Good. Looked like a crazy amount of spinach, but once it all cooked down I had a nicely silky pile of greens to eat with mashed plantains.

    Basic but tasty version of red red. Didn’t use veggie stock as I had reserved black eyed pea cooking liquid.

• Kenyan corn and bean stew (Githeri)

    Really satisfying, by itself or with another starch. Upped the spices slightly and used frozen corn and fresh-cooked beans.

    I love this so much! I also make the flavorings/veggies and use it as a sauce on pasta, with some scrambled tofu. This is very similar to a pasta and egg sort of home cooking dish I’ve seen made very frequently in Nigeria.
