  • Salted caramel pretzel ice cream pie

      FYI, this is a simple recipe of how to throw things together to make ice cream pie. They suggest a pretzel crust for this pie, but don't provide a recipe. I had to improvise and look up recipes for the crust and whipped cream for the top. It was delicious but super messy. I prefer the ice cream pie recipe in their "perfect pie" cookbook as it stayed together better.

  • Okinawan taco rice

      My brother-in-law lived in Japan, and I remember him talking about these kind of "Japanese" tacos. The taco meat was very savory and delicious with soy sauce and 1 tsp oyster sauce (I didn't have dashi). It was a great and different way to enjoy non-traditional tacos. I'll make this again.

  • Grilled barbecue chicken and peach salad

      This is a decent weeknight summer meal. The barbecue chicken and peaches were an interesting combo. The dressing was a barbecue vinaigrette. I don't know if I loved the dressing, but I ate the whole salad and enjoyed it all together when I was done. I substituted feta for goat cheese. I'd make this again if I have the ingredients.

  • Summer squash tart

      I did not make the side salad, just the tart. I used a combination of yellow and green squash, which looked nice. I wish they specified how thick we should slice the squash. The tart was ok--the zucchini did stay crunchy, which was a nice texture. I used a store-bought pie crust because I was feeling lazy--never again. It didn't roll out well at all. But, the combo of Boursin cheese, lemon zest, and squash was better than I anticipated. I'd recommend this for an easy weeknight meal in the summer.

  • Air-fryer miso-honey chicken wings

      The skin was surprisingly crisp-ish for an air fryer recipe. The sauce was ok. I would make these again, but I would try one of the other sauces instead.
