    I would not call this soup but more like a tomato sauce. It was a pretty weird recipe even after I added some broth to make it soup-like.

    Pretty good - could use some salty element like olives.

    I’m not sure whether my ricotta was too firm, but this cake was a bit ‘tough’. Excellent flavour though.

• Apple and jam cake (Torta di mele e marmellata)

    I wasn’t sure how this would turn out, given there are no rising agents aside from the beaten eggs, but I should have known to trust Emiko! I did find it a little too sweet for my liking, however, my husband & son really enjoyed it. You really must eat it on the day it’s made as we found that it did not stand up too well the following day, with the crumb becoming quite dense.

    Had a bit of pouring cream left over from another recipe and some lemons that needed using up so this was a bit if a no-brainer. I know it's a classic but I do find the dairy component seems to overpower everything else unless I'm really heavy handed with the pasta water when making the sauce. Nice quick easy supper with a glass of Chardonnay.
