      This was Ok. I made the mistake of blending it rather than chopping with food processor. I think it would have been better chunky. The beets took longer than 35m to cook in my oven.

      Made this to go with Christmas lunch. Very refreshing and a lovely alternative to traditional iced tea. The ginger and peach flavours were not very strong however.

      We are making a variety of chia puddings for breakfasts this week as a healthy way to use up leftover berries, cream, yoghurt, coulis etc from our xmas desserts. This one is lovely; it will make 6 small servings or 4 larger ones. I didn't make a smoothie but layered the fruits etc on the pudding.

      This one has now become a regular, and we make enough for 5 or so days at a time. Delicious. I add some cardamom in place of the nutmeg.

  • Bircher muesli

      I had to modify the recipe a bit because I used Greek yogurt that was far too thick for this recipe. I added more apple juice to compensate. This was an easily adaptable breakfast that I've repeated a number of times with different toppings and add-ins.

      I’ve not made a minestrone using red wine before. This is a very good, very ‘rich’ soup, perfect for winter.
