• Ricotta cheese

    Incredibly easy and lovely fresh flavor. We could easily go through twice this amount of ricotta!

• Shredded chicken tacos (Tinga de pollo)

    We enjoyed these tacos, but strangely, the taste was reminiscent of Indian food (must have been the cinnamon). I liked the technique of browning the chicken before sous vide-ing rather than after. We were able to eat right away and I had the whole kitchen cleaned up by the time we ate dinner. PS I used the full amount of chipotle and it was mild-moderate heat-wise. There is a lot of the yummy sauce and I think this chicken would also be good over rice, especially basmati.

• Seared duck breasts

    The duck ends up being cold by the time you sit down to eat it. Fine if you need a foolproof recipe if you overcook things, but it's not better than searing alone and way more trouble.

• New England lobster roll

    Was really good! I didn't get a ton of lobster flavor because of everything else that was going on, so next time we're going to do it with either shrimp or imitation crab (aka krab). Why pay for lobster if the flavor gets buried. Once the weather cools off we are going to try hot buttered lobster rolls, which my sister prefers. I've never had them but would think I might get more lobster flavor with that version.

• Perfect asparagus with tomato-basil vinaigrette

    I only made the vinaigrette. It was delicious! Went perfectly with the asparagus (which I grilled). Also used it to top fish. I can see many uses for this easy, versatile, and yummy vinaigrette/sauce.

• Brûléed scallops with dynamite sauce

    The scallops end up being overcooked and the sauce covered up their flavor completely. Won't make again, wasted $$

• White bean hummus

    I never would have thought about using souls vide to cook the beans. Not having to soak the beans over night saved time and the beans turned out very flavorful and with no breakage. This gentler method might just become my go to. Mixing the garlic, lemon, salt and water also proved to be a potent technique. After the rest the Liquid had a strong lemony-garlic flavor without harshness. Not sold on the straining before use but it does keep chunks out of the humus.
