    I checked this out from the library before buying it. It's becoming an every-week go-to cookbook for me because it's healthy, easy (!) and the recipes tend to be higher flavor with good texture contrast. I've given it away twice too.

      Fine to substitute an egg for the flaxseed if needed. We've made for a company brunch and also for a school day breakfast.

      These are delicious but I cooked them for a lot less than the recipe's instructions of 40 mins. I like my veggies on the crisper side. The lemony dressing brushed onto the courgettes (zucchini) is a great way to add some extra flavour particularly if your courgettes are not quite as fresh as you'd like.
