Notes about Recipes in this book

  • Beet, fennel and chickpea salad

    • gootenbeez on December 28, 2024

This was very delicious and I would make it again. I omitted Brussels sprouts because I didn't have them. I used an immersion blender to make the dressing. Next time I'd halve the dressing recipe because I didn't need the whole amount and have quite a bit left over.

  • Black lentil and cauliflower salad with kale, cashews and pomegranate

    • megann_b5gxnm on March 06, 2026

Tasty, especially the cauliflower. Made half of the dressing. Doubled the lentils to make it more filling. Cashews and pomegranate definitely elevate the dish.

  • Salmon, avocado and rice noodle salad

    • bwhip on May 28, 2025

Very good, and quite easy to throw together on a weeknight. I cut the dressing recipe in half, which provided about the amount needed for the salad recipe.

    • megann_b5gxnm on March 05, 2026

Very tasty. Enjoyed the fresh vegetables with the salmon and the avocado. A full batch of the dressing was a bit more than we needed. Great as leftovers.

  • Roasted honeynut, black bean and cabbage salad

    • megann_b5gxnm on January 27, 2026

Delicious with great texture. I used sweet potatoes instead of squash. It's a good stand alone meal but would make a great side dish

    • megann_b5gxnm on March 10, 2026

The spiced pepitas really add a lot of flavor. Making the sauce with yogurt only, no mayo.

  • Diosa verde dressing

    • megann_b5gxnm on March 10, 2026

Delicious. Have been omitting the mayo in favor of a little more yogurt. Lemons work just as well as limes.

  • Eggless Caesar dressing

    • gootenbeez on December 31, 2024

Not really impressed with this dressing. Will not make again. I don't find it very flavorful. It tastes mostly like oil to me.
