    Scarpaccia/ savory zucchini bread- easy & delicious. I think I will mix more of the cheese into the filling next time because I wanted a little more seasoning inside. There are so many recipes in this book that look amazing!

    pg 116 Piadina Romagnola con Mortadella, Ricotta e Pistachio. I don't know what Piadina is like with the potatoes, but I did appreciate how foldable the bread was. The filling of ricotta, mortadella, and pistachio was wonderful - pistachios belong everywhere, including in a sandwich and the ricotta held them in place. Definitely a repeatable sandwich - even open faced or on other breads.
