Notes about Recipes in this book

  • Fully loaded granola

    • nlehrer on December 12, 2025

This time I doubled the tahini and also the nuts and added a bit of honey and coconut sugar

  • Radicchio tahini Caesar (the ultimate date night salad)

    • nlehrer on March 25, 2026

Added some tofu nuggets and used miso instead of anchovies

  • An indulgent Middle Eastern breakfast toast

    • Lepa on June 09, 2025

This was rich and satisfying. I ate it with the optional dukkah- not optional, in my opinion! I made a huge batch of dukkah- so I will probably be eating this a lot in the coming weeks.

  • Sweet dukkah

    • Lepa on June 09, 2025

This is my first time making dukkah. The toast recipe in this book finally inspired me to try it. This makes a lot. I added the optional rose petals. Tasty.

  • Carrot & tahini dip

    • lean1 on May 04, 2025

Made this with too much water in the pan. Had to spill a lot of it out was taking forever to cook. Didn't brown the carrots but it still tasted great. Love the spices and the flavors really shine with no one spice overpowering the dip Could it the whole thing in one sitting it was that good.

  • Sesame focaccia [Mona Talbott]

    • isabelle_j5s8iq on May 05, 2026

Delicious! Worked well in a sheet pan. I would maybe increase the salt a bit next time, or do flakey salt on top. But I love salt haha.

  • Crunchy sumac chickpeas

    • nlehrer on May 05, 2026

Yum! Wouldn’t have thought to coat the chickpeas in tahini before crisping them up.

  • Spicy sesame noodles [Jamie Wei]

    • lean1 on May 03, 2025

Omitted the chili oil and used Soba noodles instead of youmian noodles

  • Chicken for lemon lovers with tarator

    • Ahammontree on May 31, 2026

The lemon level and flavors are perfect. I think I would make it without the parchment paper next time to broil/crisp up the chicken a bit more. The parchment paper also absorbed some of the sauce.

  • Tan tan men ramen [Kenshiro Uki]

    • crandall57 on October 19, 2025

We really enjoyed this ramen. There were a lot of components, but when we put it all together, it was delicious. To save time, I blanched the bok choy in the water for the ramen, so I only needed one pan for that. I probably could have cooked the eggs in the same pot too. I used two tablespoons of tahini in the soup bowls. I used gluten free tamari because I didn’t have gluten free Shoyu and I used Lotus Foods Rice Ramen noodles for a gluten free version of the recipe. I used vegetable broth instead of chicken broth because I didn’t have chicken broth on hand. I’m not sure we needed a full 1/2 pound of ground chicken, as the portions were rather large. I will make this again and may try using tofu instead of the ground chicken.

  • Sesame & miso peach crumble

    • Nancy402 on August 29, 2025

This was delicious. The topping was toasty and deeply flavoured, and really brought out the best in my late-season peaches. Will make again next year when local peaches return.

With its delicious nutty taste, nutritional density, and long shelf life, the sesame seed is a tiny ingredient with an enormous cultural impact and a deeply rich history.

In Sesame, Rachel Simons, co-founder of Seed + Mill, a popular tahini and halva spot in New York City's Chelsea Market, celebrates the evolution, history, and diversity of this classic ingredient. Whether it's in the form of a seed, tahini (a ground sesame paste), sesame oil, or halva (a soft, fudge-like candy made from sesame paste), readers will learn to incorporate sesame in 100 traditional and modern global recipes, including:

Sweet & Salty Sesame Challah Pear and Pistachio Breakfast Loaf with Sesame Streusel Radicchio Tahini Caesar (The Ultimate Date Night Salad) Lemony Orecchiette with Sesame Pangrattato Gomasio-Crusted Salmon Skewers Tahini Swirled Pavlova with Labneh, Berries & Halva Flakes

Through vibrant photography, evocative storytelling, and contributions from a slate of noted chefs and food luminaries across the country, including David Lebovitz, Yossy Arefi, and Zoë François, Sesame is a loving culinary tribute to the sesame seed: how it has transformed dishes, how it has been translated by different culinary cultures, and how it has tied people and places together through generations.
