      Very good, earthy. Make sure to caramelize the onions!

      I had applesauce to use so I’m glad I found this recipe. These loaves have a good texture and taste fine but I prefer other fruitcakes. Southern Living’s “Cassandra’s Light Fruit Cake” is excellent, but the “Dried Fruit, Nut, and Spice Cake” that appears in the Thermador Taste of America cookbook is probably even better. I baked some of the batter of “Gram’s Lighter Applesauce Fruitcake” in mini loaf pans. I doused one baked loaf with dark rum to see if that will make the flavor richer. I plan to try the soaked version next weekend.

      This is a good but not spectacular recipe. I made these for Thanksgiving 2020. They were a nice accompaniment to the Turkey (this program won’t allow me to use a lower case “T” !) and many side dishes, but they’re a little plain on their own.

      The sauce was loose. Next time I will cook it up a bit more to thicken it.
