  • Matcha-mango chia pudding

      This is great. Matcha powders probably vary by brand and we found we needed double the powder to get a strong enough flavor to taste against the fruit. Excellent with mango, and we’re loving it also with strawberries, or a strawberry mango blend.

      I love horchata, so this was something I was excited about trying. It's a nice variation on overnight oats and one I'll surely make again.

      Worked well, and I'd make again. The chicken cooked up faster than 20 min in the recipe, and the sauce became thick so I added some cream while the chicken was resting. I would add a bit less honey next time.

      I didn’t add the honey, if anything it needed some heat or a fresh vegetable stirred in at the end. A nice dish though-felt fancier than my usual Tuesday night dinner.

      We really enjoyed this salad. It does improve as it sits. Tried it twice - and here are my tweaks: orange juice not lemon juice, sherry vinegar not red wine vinegar, feta, toasted sliced almonds, double the honey (the salad can be a tad bit bitter). Also pretty good but a little runny in a wrap using spinach tortilla. Addendum: I dislike raw garlic in salads - instead I used garlic oil and was pleased that it had a mild garlic flavor. Best way to make: warm the oil in a pan, remove from heat, put crushed garlic cloves in oil and let steep for 2 hours.
