  • Spicy pork and refried bean soup

      This is a delicious and quick soup. It is too thin as written and looks nothing like the picture. In the notes on Epicurious people are using a large can or two cana of refried beans. I didn’t have a second can so I added a can of black beans and took the potato masher to them. It thickened up the soup nicely, but it still isn’t as thick as the picture. Lots of flavor for the time and is a nice pantry dinner. Will make again.

  • Air-fryer sea bass with dilly potato chip crust

      Absolutely delicious. My crust got quite brown so I will turn the temp down a little next time. I used halibut and mine was perfectly cooked in 11 minutes. Used dried dill and it worked well. My only quibble with the recipe is the 1 1/2 cup of potato chips. How do you measure a cup on potato chips? They don’t fit in a measuring cup. A weight measurement would have been nice. I ended up just crushing them in my hand and mixing them in until I had a paste. It was 4 handfuls. I added some finely chopped dill pickles to the sauce and a little pickle juice as that was the way my grandmother made tartar sauce. Would repeat.

      Very tasty and easy to prepare! The hardest part is smelling these cooking for an hour! The tying and subsequent undressing of the parchment parcels felt a little fussy and I wonder if next time one could simply use a parchment cap in a Dutch oven? Delicious results though! Next time I’d cut down on the sugar and use one onion instead of two.

  • Steamed fish with potatoes and anchovy butter

      Substituted cod. Simple hands off prep, but it’s a pain to get the hot plate out of the hot steamy pot! The butter sauce is good but it’s the only thing giving this dish flavor, and it feels like you need to drench the fish to make it tasty. Not sure I would make again.
