  • Skillet corn lasagna

      Recipe doesn't specify regular vs no boil noodles; I'm guessing regular - I had no boil, which worked OK but texture was a little soft. My noodles were already broken in the package so were in smaller pieces and it was hard to keep them separate, but the clumps got soft enough. Would consider a different pasta shape. Flavor was very creamy and slightly sweet from the corn. I removed the jalapeno seeds, but in hindsight maybe should have left them in - or added the peppers later - as the flavor was completely lost and we ended up adding hot sauce. Something salty like bacon might be good here too.

  • Creamy tomato pasta

      My wife noticed the beautiful photo of this dish on the cover of the magazine, when we were at the airport earlier today. We thought it looked so good, that I decided to make it for dinner when we got home! We were able to find some beautiful SunGold tomatoes at the store on the way home. Both of the two stores we went to were out of burrata (!), so I bought some fresh Bocconcini cheese and used that instead, which worked out just fine. The dish was easy to prepare, and the sauce was heavenly, with those sweet, fresh SunGold tomatoes. We'll make this one again.

      Wonderful. I had a generous 2 lbs tomatoes and there was enough sauce for a full pound of pasta.
