      p. 309 -- Indexed recipe here includes the ingredients for the Homemade Apple Butter sub-recipe, which I made and used. The flavor of it in the bread is rather subtle, so we slathered more on top when enjoying it warm. Still, the bread itself is very good even without the extra apple butter, and it tastes quite wholesome with the whole wheat and wheatgerm. I kneaded in the stand mixer with the dough hook for about 15 minutes on the lowest speed and used the larger amount of flour. Time in the oven was just right, though the egg wash does make for a very dark crust.

      p. 310 -- Good but not mindblowing. It was kind of a pain to force the apples through a sieve even though I cooked them 10 or 15 minutes longer than instructed... I used a mix of apples and one variety seemed to take a lot longer to get soft than the others. I only used half the amount of brown sugar as most of my apples weren't very tart. Yielded just over 1 pint, not the 2 pints indicated.

      I used fresh milled hard red wheat for these and made sure to knead until gluten was very developed. Brushed with butter out of the oven. Tasty, healthy, and different than a standard roll.
