  • Rice and peas (Risi e bisi)

      Risi e bisi is a must for me, every spring when I can get fresh peas. This was a decent version though I found I needed much more stock than mentioned in the recipe and it still didn't come out soupy enough. Very filling and good flavor, however.

  • Pasta with pancetta, peas, and mushrooms (Paste conze)

      This was really excellent. The slow cooking time brought out the sweetness of the onions and peas, and a lot of rich flavor from the mushrooms. More complex flavors than I expected. A definite one to remember for next summer when fresh peas are once again available.

  • Braised chicken with mushrooms (Pollastra in tecia con funghi)

      Relatively simple and delicious! I made with a mixture of fresh and dried mushrooms. The next day I shredded the leftover chicken into the gravy and turned it into a pasta sauce (with some frozen peas added, my SO's suggestion.)
