  • Chunky beetroot soup

      An okay recipe, a good one to have on hand to use up leftover veg, and quite healthy. Certainly nicer with a dollop of sour cream (and dill) - but all in all I'm not too bothered to make it again.

      An ok soup. I would dice the veg instead of cutting into matchsticks which took me longer than desired.

  • Sweet potato and cauliflower curry

      This was pretty good for a healthy curry. Really need to add the lime juice at the end for more interesting flavour. I needed to add a corn flour slurry at the end to thicken the curry otherwise it would have been very watery.

  • Soft polenta with pak choi and soy

      We liked the mushroom and pak choi vegetables, but weren't too keen on the polenta accompanying it. We didn't have the 7-spice paste (book says paste not powder) on hand to flavour the polenta in this way, which may have made the difference.

  • Summery Provencal apricots

      I fancied a change from my usual apricot compote, and this fitted the bill. Quick and easy to do. I baked them in the oven rather than in a pan -- they are less likely to collapse this way. After cooking, remove the apricots and boil the syrup down thoroughly till it is a lovely ruby red. Let it cool slightly before pouring over the apricots.

      Looks elegant. Nice recipe for a special low fat dessert....or great with Greek yogurt for breakfast.
