    I made the pancake and waffle mix on page 121 last week which made for a very easy breakfast today. Really delicious.

      I made these regularly for many years and they were a family favorite. At that time I lived in area with many pick-your-own cherry orchards and a wide variety of cherries were available. Now I seem to be surrounded with mostly Bing Cherries, and they do not work as well in this recipe, as Witty notes. If you have access to varieties of fresh cherries other than Bing, this recipe is highly recommended.

      Lovely fragrance from fresh spices, much better than the commercial blends, which always seem to taste a bit dusty and worn out. I reduced the cinnamon by 1 stick for my tastes, and used powdered mace.
