    Vietnamese Pork Meatballs [pg 130]: With fish sauce, Thai curry paste, garlic, brown sugar, sesame oil, sambal oelek, fresh herbs & lemongrass in the mix, these were really good in our house version of "glazed meatballs, stir fried vegetables & noodle bowls". They are oven roasted (I go just under to finish in the hot glaze) and contain no egg or bread crumbs. I will make these guys again for sure.

    Irish Soda Bread [pg 173]: The result here is a tasty round of bread that is really good served warm with butter BUT the journey was a bit fraught. The dough (perhaps more like a batter?) was really wet and so kneading was out the question. I put it on my pastry mat & used a bench scraper with lots of flour (+ oats as she also suggests) to keep trying to get a round. I finally used 2 scrapers to get it on the pan and as I said, it is pretty good! A quick online search did show recipes with higher dry : wet ingredient ratios. I'll tackle some other recipes from my books before revisiting this one.

    Pizza Dough [pg 155]: A 1/2 recipe made 1 roughly 9" pizza - perfect size for 2. I used a 50:50 mix of all purpose & 00 flour and the result was a great crispy/chewy crust. This might be the new favourite recipe. I also like how she gives you the options of a 1 hour rise OR a slower fridge rise.

    Sweet Spiced Pecans [pg 19]: I was pretty sure that the few drops of tabasco would not be enough heat so I had a pretty heavy hand and after a taste partway through the roasting time, I added a good sprinkle of cayenne & some more salt. I also left them in the oven for close to 10 extra minutes. My guests enjoyed these but I certainly prefer Barefoot Contessa's Chipotle Rosemary Roasted Nuts.

    Green Goddess Dip [pg 84]: I cut this back to roughly 1/3...just enough for 2 of us to have veggies & dip beside our burgers. I used a mix of mayo & Greek yogurt (instead of just mayo) and added Lea & Perrins to taste in place of the optional anchovy paste. I used my mini processor for such a small amount and so did not get the beautiful, uniform green colour pictured - perhaps my big blender would do that, but it's not worth using it for such a small amount. With parsley, chives & green onion from the garden, we really enjoyed this and I would certainly repeat for us and/or guests.
