  • Apple cinnamon muffins

      I found these to be quite bland. The 2 tsp of cinnamon was not enough. If I ever do attempt these again, nuts and chocolate chips may be added to see if it helps, and maybe a mixed baking spice.

  • Crunchy pear muffins

      I sprinkled these with a bit of turbinado sugar for crunch and added all the optional ingredients: cranberries, walnuts, and ground ginger. They were not too sweet, and with pops of cranberry throughout.

      I love the flavours of this one. I do find the sauce to be too thin. This last time, I simmered it a while to reduce before adding the cornstarch slurry. It was still too thin so made more slurry. Next time I’m going to try just simmering the marinade and then, after adding the slurry, adding the reserved cider a bit at a time until reaching the desired thickness.

  • Spiced pear bundt cake

      This is a lovely way to use up excess pears in this easy spiced bundt cake. Along with grated pear, I liked the bits of diced pear in the finished cake. I also appreciated that this wasn't too sweet. Will repeat.
