This is a book about bread from around the world. It covers a range of breads, including the naan bread and chipatis of India, the soda farls of Ireland, the foccaccia of Italy, the brioche of France and the sourdough bread of the USA. The history of each bread and its recipe is recorded. Information is given on the necessary equipment, ingredients and raising agents.
