    OMELETTE AUX FINES HERBES (Fresh herb omelette), P 24. Classic French dish with herbs from the garden. Great for a lazy weekend breakfast/brunch. Used herbs from the garden and topped with some fermented purslane.

    SOUP AU POTIRON (CREAM OF PUMPKIN SOUP) Of all the pumpkin soups I have made over the decades of cooking, this is the one I return to time and time again. Use the best stock, and add a little lemon juice, just a touch, before serving.

    PIPERADE (TOMATOES WITH CAPSICUMS AND TOMATOES) I love this book. It has been with me for more years than I can remember, and certainly before I became vegetarian. I have made quite a few dishes from it. This morning I made Piperade but used "firm soft tofu" instead of eggs. I always add turmeric to scrambled tofu, for the colour, and Indian black salt for the eggy flavour it gives. 10/10.
