    HOME-MADE ARTICHOKE PASTE – p. 14 – First use of this recipe and this book. Happy to report another success story. The book starts out with an ingredient-focussed chapter on antipasti. In this case, marinated artichokes were the feature. There’s a headnote explaining the ingredient, its use and how best to source, then a variety of serving suggestions are provided. This paste was the final item in the section and though the recipe is short with very few ingredients, it packs a punch and is much greater than the sum of its parts. I happened to have some leftover anchovies in the fridge so I opted for that version and added in some fresh squeezed lemon juice for a hit of brightness. For seasonings I went with a pinch of dried oregano, ground fennel, S&P. Outstanding and very wine friendly.
