    Congo bars are delicious.

Notes about Recipes in this book

  • Hazelnut cream cheese brownies

    • LaPomme on September 01, 2011

I don't know if I used too small eggs, but my brownie batter was extremely thick and difficult to spread as directed. Taste was great. But spreading the layers, and then swirling was not easy.

  • Emerald City brownies

    • LaPomme on June 13, 2011

Love these minty brownies. I don't know if they would be as good without the mint chocolate chips (which the recipe says are optional).

  • Earl Grey brownies

    • DKennedy on December 25, 2016

I made these for a holiday get together and they were a disappointment. Not nearly chocolatey enough, watered-down tasting, and a little spongy.

  • Berry good bars

    • DKennedy on December 25, 2016

I made these for a holiday get together and they were tasty, but not special. Two disappointing recipes from this book in a row. Not a good sign.

  • Cranberry blondes

    • Melanie on November 28, 2011

I added the juice of one orange to the mix as it seemed quite dry. These were so tasty, loved the pop of the cranberries against the dough.

  • Banana bread brownies

    • suzibakes on July 06, 2012

Nice but a tad hard to judge when it was ready. Really recommend it warm with some cream on top.

  • White chocolate bars

    • Ray234 on May 15, 2018

Add-ins, like macadamia nuts, are great also.

  • Blondies

    • demomcook on March 08, 2019

These were very good. The direction to cream the eggs and butter did not result in a creamed mixture. The butter would not incorporate. Once the sugar was added, a batter did form, but with flecks of butter still showing. Baked in a glass pan, and needed 35 minutes, not 25. Add ins were semi-sweet chocolate chips and chopped pecans.

Publishers Text

Patricia Helding's rich, intensely chocolatey Fat Witch brownie is a New York obsession, an internet sensation, and arguably the very best brownie to be found on the planet. Unlike other bakeries that feature a range of desserts, Fat Witch, launched by Helding in 1998, specializes only in brownies - baking and selling over 2,000 each day. In "Fat Witch Brownies", Helding showcases for the first time her favorite spins on the classic chocolate brownie with creations like the Banana Bread Brownie and the Breakfast Brownie, and she expands her repertoire even further with recipes for other scrumptious bar-shaped confections. With over 50 recipes that can be baked in the same 9 X 9-inch pan and require fewer than 10 ingredients, Helding shows that baking from scratch is neither expensive nor time-consuming. All of her recipes include ingredients from local grocery stores, and are ready to serve in one hour or less. Beginning with tips on the proper tools, timing, and techniques, continuing with five chapters of recipes, and finishing with fabulous frostings, "Fat Witch Brownies" allows readers to explore the versatility and richness of brownies and bars and create the incredible desserts in their very own kitchens that have made Helding's bakery famous.
